Ingredients

Scale

1 cup unsalted butter

1 cup granulated sugar

1 cup brown sugar

1 large egg

2 teaspoons vanilla extract

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup toffee bits

1 1/2 cups semi-sweet or dark chocolate (for dipping)

Optional sea salt or extra toffee bits for topping

Instructions

1. Cream the butter with both sugars until light and fluffy.

2. Add the egg and vanilla extract and mix until well combined.

3. In a separate bowl, whisk together flour, baking soda, and salt.

4. Gradually add dry ingredients to the wet mixture, mixing until a dough forms.

5. Fold in the toffee bits evenly.

6. Chill the dough for at least 30 minutes.

7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

8. Scoop dough into balls and space them on the sheet. Bake 9–11 minutes.

9. Cool cookies on the sheet for a few minutes, then transfer to a wire rack.

10. Melt chocolate in short microwave bursts or using a double boiler.

11. Dip half of each cookie into chocolate, then place on parchment.

12. Sprinkle with toffee bits or sea salt before chocolate sets.

13. Let cookies rest until chocolate hardens.

Notes

Chilling the dough is essential for a thicker cookie with better flavor.

Let cookies cool completely before dipping to avoid messy chocolate.

Use parchment or silicone baking mats for even baking and easy cleanup.
