1 1/2 cups heavy whipping cream

3 tablespoons powdered sugar

1 teaspoon vanilla extract

12 ounces semi-sweet chocolate chips or chopped chocolate

1 tablespoon coconut oil or butter

1 pound fresh strawberries, washed, hulled, and dried

1/4 cup strawberry jam (optional)

2 tablespoons chocolate shavings or sprinkles (optional garnish)


Instructions

1. Prepare the pie crust by baking and cooling it completely, or use a ready-made graham cracker crust.

2. In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

3. Melt the chocolate with the coconut oil or butter in short microwave bursts or over a double boiler until smooth.

4. Slice some of the strawberries in half for the inner layer and keep the best whole strawberries for the topping.

5. If using, spread a thin layer of strawberry jam over the bottom of the crust.

6. Arrange the sliced strawberries evenly over the crust.

7. Spread half of the whipped cream mixture over the strawberries and smooth it gently.

8. Add the remaining whipped cream on top and arrange the whole strawberries neatly over the surface.

9. Chill the pie for 30 minutes so the layers can firm up.

10. Drizzle the melted chocolate over the strawberries.

11. Sprinkle chocolate shavings or sprinkles over the top if desired.

12. Refrigerate the pie for at least 1 hour before slicing and serving.

13. Use a sharp knife dipped in hot water for cleaner slices.


Notes

Chill the mixing bowl and beaters before whipping the cream for the best volume and texture.
