Description
Chocolate Covered Dates are a luxurious, naturally sweet treat made by stuffing Medjool dates with nuts or nut butter, then dipping them in rich dark chocolate. Topped with chopped nuts or coconut, they’re a simple no-bake dessert perfect for any occasion.
Ingredients
12 Medjool dates (pitted)
100g dark chocolate (chopped or chips)
2 tablespoons chopped pistachios
2 tablespoons chopped almonds
2 tablespoons shredded coconut
2 tablespoons almond butter or peanut butter (optional filling)
12 whole roasted almonds or hazelnuts (optional filling)
Pinch sea salt (optional)
Instructions
1. Slice each Medjool date on one side and remove the pit. Fill with nut butter or a whole nut if desired, then close gently.
2. Melt the dark chocolate using a double boiler or in the microwave with 20-second intervals, stirring until smooth.
3. Dip each date into the melted chocolate using a fork or dipping tool. Let excess chocolate drip off.
4. Place dipped dates on a parchment-lined tray. Sprinkle with chopped nuts, coconut, or sea salt while the chocolate is still wet.
5. Chill the tray in the refrigerator for 15–20 minutes until the chocolate is firm.
6. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
