For the Cookie Dough Center

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups all-purpose flour (heat-treated if preferred)
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips

For the Brownie Batter

  • 1/2 cup unsalted butter
  • 4 oz semi-sweet chocolate, chopped or chips
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt

For the Peanut Butter Glaze

  • 1/4 cup creamy peanut butter
  • 2 tablespoons unsalted butter
  • 1/2 cup powdered sugar
  • 23 tablespoons milk (adjust for consistency)

Toppings

  • Additional mini chocolate chips for garnish

Instructions

  1. Prepare Cookie Dough:

    • Cream butter, sugars until fluffy. Add milk and vanilla.

    • Mix in flour and salt, then fold in chocolate chips.

    • Roll into 1-inch balls and chill for at least 30 minutes.

  2. Make Brownie Batter:

    • Melt butter and chocolate. Stir in sugar, then eggs and vanilla.

    • Fold in cocoa powder, flour, and salt.

  3. Assemble:

    • Preheat oven to 350°F (175°C). Grease muffin pan.

    • Spoon brownie batter into each cavity, add cookie dough ball, cover with more batter.

  4. Bake:

    • Bake for 12–15 minutes until tops are set but centers remain soft.

  5. Prepare Glaze:

    • Melt peanut butter and butter. Whisk in powdered sugar and milk until smooth.

  6. Finish:

    • Cool brownie bombs slightly. Drizzle with glaze and garnish with chocolate chips.
