24 Oreo cookies crushed

5 tablespoons unsalted butter melted

24 ounces cream cheese softened

3/4 cup granulated sugar

1/2 cup sour cream

1/2 cup heavy cream

6 ounces dark chocolate melted

3 large eggs

2 teaspoons vanilla extract

2 cups cherries fresh or frozen

1/4 cup granulated sugar (for topping)

1 tablespoon lemon juice

1 tablespoon cornstarch

Chocolate curls or shavings optional for garnish


Instructions

1. Preheat oven to 325°F (160°C). Pulse Oreo cookies into fine crumbs and mix with melted butter. Press into a 9-inch springform pan. Bake for 8 minutes. Let cool.

2. Beat cream cheese until smooth. Add sugar and mix well. Blend in melted chocolate, sour cream, heavy cream, and vanilla. Add eggs one at a time, mixing gently.

3. Pour filling over crust. Bake for 55–65 minutes until edges are set and center jiggles slightly. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.

4. Chill the cheesecake in the fridge for at least 6 hours or overnight.

5. In a saucepan, combine cherries, sugar, lemon juice, and cornstarch. Cook over medium heat until thick and glossy, about 5–7 minutes. Let cool.

6. Spoon cherry topping over chilled cheesecake. Decorate with chocolate curls and fresh cherries. Slice and serve.


Notes

Use full-fat cream cheese for best texture.

Avoid overmixing after adding eggs to prevent cracks.
