Instructions

  1. Make the Chimichurri: In a bowl, combine chopped parsley, half the minced garlic, red wine vinegar, olive oil, oregano, salt, and pepper. Mix well. Set aside 2–3 tablespoons for later.
  2. Marinate the Chicken: Place chicken breasts in a dish or zip-top bag, and pour chimichurri over them. Coat evenly, cover, and refrigerate for at least 30 minutes.
