Ingredients
4 boneless skinless chicken breasts or thighs
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
1 tablespoon olive oil
1 tablespoon butter
1 tablespoon butter
4 cloves garlic minced
1 cup long grain white rice
2¼ cups chicken broth
½ cup heavy cream
¾ cup freshly grated Parmesan cheese
Salt and pepper to taste
2 tablespoons chopped fresh parsley
Instructions
1. Pat the chicken dry and season with salt, pepper, garlic powder, onion powder, and paprika.
2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and keep warm.
3. Reduce heat to medium and add 1 tablespoon butter. Stir in minced garlic and sauté for 30–60 seconds until fragrant.
4. Add rice to the skillet and stir to coat in the garlic butter. Lightly toast the rice for 1–2 minutes.
5. Pour in chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, stirring occasionally, until rice is tender and liquid is absorbed.
6. Stir in heavy cream and Parmesan cheese. Mix until creamy. Add salt and pepper to taste.
7. Return chicken to the skillet and spoon some rice over it. Heat through for 2–3 minutes.
8. Garnish with fresh parsley and serve hot.
