2 boneless skinless chicken breasts

1 tablespoon olive oil

2 tablespoons butter

4 cloves garlic, minced

2 tablespoons lemon juice

1/3 cup dry white wine

2 cups chicken broth

3/4 cup long grain white rice

1/2 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Pat the chicken dry and season both sides with salt and black pepper.

2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 4–5 minutes on each side until golden and fully cooked. Remove and set aside.

3. In the same skillet, reduce heat to medium and melt the butter. Add the garlic and sauté until fragrant, about 30 seconds.

4. Pour in the white wine and lemon juice, scraping the browned bits from the bottom of the pan. Simmer for 2–3 minutes.

5. Return the chicken to the skillet, spooning the sauce over the top. Let it warm through for 1–2 minutes. Remove from heat and set aside.

6. In a separate saucepan, melt a tablespoon of butter over medium heat. Add the remaining garlic and sauté briefly. Stir in the rice and toast for 1–2 minutes.

7. Add chicken broth and bring to a simmer. Cover, reduce heat, and cook for 18–20 minutes or until the rice is tender and liquid is absorbed.

8. Stir in the heavy cream and Parmesan cheese until smooth and creamy. Taste and adjust seasoning.

9. Serve the rice in shallow bowls or plates. Slice the chicken and lay it over the rice. Spoon some of the garlic-lemon sauce on top and garnish with fresh parsley.


Notes

Use freshly grated Parmesan for the creamiest texture—pre-shredded cheese won’t melt as well.

Make sure to let the chicken rest for 5 minutes after cooking before slicing to keep it juicy.

Add extra lemon juice at the end if you want a brighter, more citrus-forward flavor.
