- 2 chicken breasts or thighs (or 2 cups shredded rotisserie chicken)
- 1 1/2 cups uncooked long-grain white rice
- 2 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 cup frozen peas
- 1 1/2 cups shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken with salt, pepper, garlic powder, and onion powder. Cook the chicken in a skillet or bake it until fully cooked. Slice the chicken into bite-sized pieces.
- In a bowl, mix the rice, chicken broth, cream of chicken soup, peas, and seasoning.
- In a baking dish, spread the rice mixture and layer the sliced chicken on top. Add cheese on top of the chicken.
- Cover the casserole with foil and bake for 30-40 minutes, then uncover and bake for an additional 10-15 minutes until cheese is melted and golden.
- Let the casserole rest for 5 minutes before serving.
