  • 2 chicken breasts or thighs (or 2 cups shredded rotisserie chicken)
  • 1 1/2 cups uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup frozen peas
  • 1 1/2 cups shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken with salt, pepper, garlic powder, and onion powder. Cook the chicken in a skillet or bake it until fully cooked. Slice the chicken into bite-sized pieces.
  3. In a bowl, mix the rice, chicken broth, cream of chicken soup, peas, and seasoning.
  4. In a baking dish, spread the rice mixture and layer the sliced chicken on top. Add cheese on top of the chicken.
  5. Cover the casserole with foil and bake for 30-40 minutes, then uncover and bake for an additional 10-15 minutes until cheese is melted and golden.
  6. Let the casserole rest for 5 minutes before serving.
