- 1 ½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 4 large flour tortillas
- 1 tablespoon olive oil or butter
- ½ cup bell peppers (diced, any color)
- ½ cup onion (diced)
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- Salt & black pepper to taste
- Optional: ¼ cup chopped cilantro, 1 jalapeño (finely chopped), ½ cup black beans or corn
Instructions
- Prepare the Filling: If using raw chicken, season with chili powder, cumin, garlic powder, salt, and pepper. Cook in a skillet over medium heat with oil until fully cooked, then shred or dice. Sauté the onions and bell peppers for 3–4 minutes until softened. Set aside.
- Assemble the Quesadilla: Lay a tortilla flat. Sprinkle cheese on one half, add chicken, veggies, and any extras. Top with more cheese and fold in half.
- Cook the Quesadilla: Heat a skillet over medium heat with oil or butter. Cook the quesadilla for 2–3 minutes per side until golden brown and crispy. Press gently with a spatula while cooking.
