12 oz egg noodles

3 cups cooked shredded chicken

1.5 cups frozen peas and carrots

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1.5 cups shredded cheddar cheese

0.5 tsp garlic powder

0.5 tsp onion powder

0.5 tsp salt

0.25 tsp black pepper

1.25 cups crushed butter crackers

4 tbsp unsalted butter (melted)

1 tbsp fresh parsley (optional)


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.

2. Cook egg noodles in salted boiling water until al dente, then drain and set aside.

3. In a large bowl, combine cream of chicken soup, sour cream, cheddar cheese, garlic powder, onion powder, salt, and pepper.

4. Stir in the cooked chicken and frozen peas and carrots until evenly coated.

5. Fold in the cooked noodles gently, ensuring everything is combined.

6. Transfer mixture into the prepared baking dish and spread evenly.

7. Mix crushed butter crackers with melted butter and sprinkle over the top.

8. Bake for 25–30 minutes, or until bubbly and golden on top.

9. Let rest for 5–10 minutes before serving. Garnish with parsley if desired.


Notes

Letting the casserole sit before serving helps it firm up for better slices.

For extra richness, add a splash of heavy cream to the sauce mix.
