For the Chicken

  • 2 boneless, skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 tbsp taco seasoning
  • Juice of 1 lime

For the Guacamole

  • 2 ripe avocados
  • Juice of 1 lime
  • 2 tbsp finely chopped red onion
  • 2 tbsp chopped cilantro
  • Salt & pepper to taste

For the Lime Crema

  • 1/2 cup sour cream or Greek yogurt
  • Juice of 1/2 lime
  • 1 tbsp chopped cilantro
  • Pinch of salt

For the Bowl

  • 1 cup canned black beans, rinsed & drained
  • 1 cup corn kernels (fresh, frozen, or canned), warmed
  • 1 medium tomato, diced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Season the Chicken: Combine chicken, olive oil, taco seasoning, and lime juice. Marinate for 15–30 mins (optional).

  2. Cook the Chicken: In a hot skillet, cook chicken for 5–7 mins until cooked through. Set aside.

  3. Make Guacamole: Mash avocados and mix with lime juice, red onion, cilantro, salt, and pepper.

  4. Prepare Lime Crema: Whisk sour cream, lime juice, cilantro, and salt until smooth.

  5. Warm Bowl Components: Heat black beans and corn. Drain any excess liquid.

  6. Assemble the Bowl: Add beans and corn to the bowl, top with chicken, guacamole, lime crema, diced tomato, cilantro, and lime wedges.
