2 slices sourdough bread

1 grilled or pan-seared chicken breast (56 oz), sliced

1/2 ripe avocado, mashed

1/2 small red onion, thinly sliced

1 small tomato, sliced

2 slices sharp cheddar cheese

1 tablespoon unsalted butter, softened

1 tablespoon fresh cilantro or parsley (optional)

Salt and pepper to taste

1/4 teaspoon garlic powder (optional)

1/4 teaspoon smoked paprika (optional)

Juice of 1/4 lime


Instructions

1. Season the chicken with salt, pepper, garlic powder, and smoked paprika. Grill or sear it for 5–6 minutes per side until fully cooked. Let rest and slice thinly.

2. Mash the avocado with lime juice and a pinch of salt. Stir in chopped cilantro if desired.

3. Butter one side of each bread slice. On the unbuttered side, layer cheese, sliced chicken, tomato, onion, avocado spread, and another cheese slice. Close the sandwich, buttered side out.

4. Heat a skillet over medium heat. Place the sandwich in the pan and press gently. Cook for 3–4 minutes until golden and crispy.

5. Flip and cook the other side for another 3–4 minutes until the cheese is melted.

6. Remove from skillet, let rest for a minute, then slice and serve hot. Garnish with fresh herbs if desired.
