Ingredients
2 to 3 cups cooked shredded chicken
1/2 cup melted butter
1 cup self-rising flour
1 cup milk
2 cups chicken broth
1 can (10.5 oz) cream of chicken soup
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped parsley or green onion (optional garnish)
Instructions
1. Preheat oven to 375°F (190°C).
2. Grease a 9×13-inch baking dish lightly with butter or cooking spray.
3. Spread the shredded chicken evenly across the bottom of the dish.
4. Drizzle the melted butter evenly over the chicken.
5. In a bowl, whisk together self-rising flour and milk until smooth.
6. Pour the flour-milk mixture over the chicken layer. Do not stir.
7. In another bowl, combine the chicken broth and cream of chicken soup until smooth.
8. Pour this mixture gently over the top. Again, do not stir.
9. Bake uncovered for 45 to 50 minutes until the top is golden and the filling is bubbly.
10. Let it rest for 5 to 10 minutes before serving. Garnish with chopped parsley or green onion if desired.
Notes
Use pre-cooked chicken to save time and ensure the casserole cooks evenly.
Don’t stir the layers after assembling—this is key for the dumpling texture.
Let the casserole rest before serving so it sets and scoops cleanly.
