Chewy Special K Bars are an easy, no-bake dessert made with crispy cereal, a sweet peanut butter syrup, and a rich chocolate-butterscotch topping. They’re nostalgic, delicious, and perfect for quick treats or party trays.
Ingredients
6 cups Special K cereal
1 cup granulated sugar
1 cup light corn syrup
1 cup creamy peanut butter
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
Instructions
1. Grease or line a 9×13-inch pan with parchment paper.
2. In a large saucepan, combine sugar and corn syrup. Heat over medium, stirring constantly, until the mixture just begins to boil. Remove from heat.
3. Stir in peanut butter and vanilla extract until smooth.
4. Gently fold in the Special K cereal until evenly coated.
5. Press the mixture evenly into the prepared pan.
6. Melt the chocolate chips and butterscotch chips together in the microwave or over a double boiler until smooth.
7. Spread the melted mixture over the cereal base evenly.
8. Let the bars set at room temperature or refrigerate until firm. Slice and serve.
Notes
Store bars in an airtight container for up to 5 days at room temperature or freeze for up to 2 months.
For cleaner cuts, use a warm knife.
Don’t overboil the syrup to keep the bars soft and chewy.
