  • 1 cup granulated sugar

  • 6 oz dark chocolate, melted
  • 3 large eggs
  • 1 tsp vanilla extract

For the Cherry Topping:

  • 2 cups fresh or frozen cherries (pitted)
  • 2 tbsp honey or maple syrup
  • 1 tbsp cornstarch
  • 2 tbsp water

Instructions

Step 1: Prepare the Crust

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the chocolate cookie crumbs with melted butter until combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes, then let it cool while preparing the filling.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat the cream cheese and sugar until smooth.
  2. Add cocoa powder, melted dark chocolate, and vanilla extract. Mix until combined.
  3. Add the eggs one at a time, mixing gently to avoid overmixing.
  4. Pour the filling over the cooled crust and smooth the top.

Step 3: Bake the Cheesecake

  1. Place the cheesecake in the oven and bake for 50-60 minutes. The center should be slightly jiggly.
