Ingredients

2 medium zucchini, grated and drained

1 large egg

1 cup shredded mozzarella cheese, divided

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1 teaspoon Italian seasoning

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Grate zucchini using a box grater and place it in a clean kitchen towel. Squeeze out as much moisture as possible.

3. In a large bowl, combine drained zucchini, egg, 1/2 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix well.

4. Transfer the mixture to the prepared baking sheet and shape it into a rectangle about 1/4-inch thick.

5. Bake for 18–20 minutes, or until the edges are golden and the base is set.

6. Remove from the oven and sprinkle the remaining 1/2 cup mozzarella evenly over the top. Add more Parmesan if desired.

7. Return to the oven for another 5–7 minutes, or until the cheese is melted and bubbly.

8. Let cool for a few minutes, then slice into breadsticks using a sharp knife or pizza cutter.

9. Garnish with chopped fresh parsley, if using.

10. Serve warm with a side of marinara or your favorite dipping sauce.


Notes

Make sure to remove as much water as possible from the zucchini to prevent sogginess.

You can broil the breadsticks for 1–2 minutes at the end for extra golden cheese.

Freshly shredded cheese melts better than pre-packaged varieties for that perfect cheese pull.
