12 oz rotini pasta

2 chicken breasts, diced

1 tablespoon olive oil

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons butter

3 garlic cloves, minced

1 cup milk or heavy cream

8 oz Velveeta cheese, cubed

1 cup shredded mozzarella cheese

2 tablespoons chopped parsley (or 1 teaspoon dried parsley)

½ cup reserved pasta water


Instructions

1. Bring a large pot of salted water to a boil. Cook the rotini until al dente according to package instructions. Drain and reserve ½ cup pasta water.

2. Dice chicken breasts into bite-sized pieces. Season with salt, pepper, and Italian seasoning.

3. In a skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown and fully cooked, about 6–8 minutes. Remove and set aside.

4. Reduce skillet heat to medium. Add butter and minced garlic. Sauté until fragrant, about 1 minute.

5. Add cubed Velveeta and milk (or cream). Stir until cheese is fully melted and sauce is smooth. If too thick, add a splash of reserved pasta water.

6. Add cooked pasta to the cheese sauce. Stir until fully coated.

7. Sprinkle mozzarella evenly on top. Reduce heat to low and cover skillet until cheese melts, 2–3 minutes. Optionally, broil for a golden top.

8. Return chicken to skillet or plate alongside pasta. Garnish with chopped parsley and serve warm.
