Ingredients
2 cups shredded cooked chicken
2 cups cooked white rice
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels
1 red bell pepper, chopped
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 packet taco seasoning (about 2 tablespoons)
3/4 cup sour cream
1 cup salsa
2 tablespoons chopped fresh cilantro (optional)
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. In a large bowl, combine chicken, rice, black beans, corn, bell pepper, taco seasoning, sour cream, and salsa. Mix well.
3. Spread half the mixture into the prepared dish. Sprinkle with half the cheeses.
