Description

Cheesy Mashed Potato Puffs are crispy on the outside, fluffy and cheesy on the inside. They’re the perfect use for leftover mashed potatoes and make an ideal side dish, snack, or brunch treat. Easy to customize and even easier to love.


Ingredients

  • 2 cups mashed potatoes
  • 2 large eggs
  • 1 cup shredded sharp cheddar cheese (plus more for topping)
  • 1/4 cup sour cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp chopped fresh parsley (optional)
  • Butter or cooking spray (for greasing the tin)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with butter or non-stick spray.
  2. In a large bowl, mix together mashed potatoes, eggs, cheddar cheese, sour cream, salt, pepper, garlic powder, and parsley if using.
  3. Divide the mixture evenly among the muffin cups, filling each about 3/4 full.
  4. Sprinkle a little extra cheese on top of each puff.
  5. Bake for 25-30 minutes until golden brown and firm to the touch.
  6. Let cool for 5 minutes before removing from the tin. Serve warm.
