  • 1 lb ground turkey
  • 12 oz rigatoni pasta
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Chopped parsley (optional, for garnish)

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add ground turkey and season with salt and pepper. Cook until browned.
  3. Add diced onion to the turkey and cook until softened, about 3 minutes. Stir in garlic and cook for 30 seconds.
  4. Mix in tomato paste and let it cook for 1-2 minutes.
  5. Pour in chicken broth, stirring to combine. Bring to a gentle simmer.
  6. Reduce heat and stir in heavy cream. Once warm, add mozzarella and parmesan. Stir until melted into a smooth sauce.
  7. Add the cooked pasta to the skillet. Toss to coat, adding reserved pasta water as needed.
  8. Garnish with parsley and serve hot.
