  • 3 cups cooked white rice
  • 3 cups broccoli florets (fresh or frozen, steamed and drained)
  • 1 small onion, chopped
  • 2 cups shredded sharp cheddar cheese (divided)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a medium casserole dish.
  2. Steam or blanch broccoli until just tender. Drain well.
  3. In a skillet, melt butter and sauté onion until soft and translucent.
  4. In a large bowl, mix cream of mushroom soup, milk, garlic powder, sautéed onion, and half of the shredded cheese. Season with salt and pepper.
  5. Stir in the cooked rice and broccoli until well combined.
  6. Transfer mixture to the prepared baking dish. Sprinkle remaining cheese on top.
  7. Bake uncovered for 25–30 minutes, or until bubbly and golden on top.
  8. Let rest 5–10 minutes before serving. Garnish with parsley if desired.
