  • 1 lb ground beef or thinly sliced steak (sirloin, ribeye, or flank)
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 ½ cups shredded provolone cheese
  • 1 cup heavy cream
  • ½ cup beef broth
  • 1 tbsp butter
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions, then drain and set aside.
  2. Sauté the Vegetables: In a large skillet, melt the butter over medium heat. Add the diced onion and bell pepper, cooking until soft and slightly caramelized. Stir in the garlic and cook for another minute.
  3. Cook the Beef: Add the ground beef or thinly sliced steak to the skillet. Season with salt, pepper, and Italian seasoning. Cook until browned and fully cooked. Drain excess grease if needed.
  4. Make the Provolone Sauce: Reduce heat to low. Pour in the beef broth and heavy cream, stirring to combine. Slowly add the shredded provolone cheese, stirring continuously until melted and smooth.
  5. Combine Everything: Add the cooked tortellini to the skillet, tossing gently to coat in the creamy provolone sauce. Let simmer for 2 minutes.
