Strawberries:

  • 1 pound fresh strawberries (large, firm)

Cheesecake Filling:

  • 8 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 12 tbsp heavy cream

Graham Cracker Topping:

  • 3 graham crackers (finely crushed)
  • 1 tbsp melted butter
  • 1 tsp brown sugar (optional)

Instructions

  1. Wash and thoroughly dry strawberries. Cut off stems to create a flat base.
  2. Hollow out the center of each strawberry with a paring knife or melon baller.
  3. In a bowl, beat softened cream cheese until smooth.
  4. Add powdered sugar and vanilla; mix well.
  5. Slowly add heavy cream until desired consistency is reached.
  6. Chill the filling for 10–15 minutes if needed.
  7. Prepare crumb topping: mix crushed graham crackers with melted butter and brown sugar.
  8. Pipe or spoon cheesecake filling into each strawberry.
  9. Sprinkle with graham cracker topping.
  10. Chill for 15–30 minutes or serve immediately.
