For the Brownie Layer

  • 1 cup (226g) unsalted butter, melted
  • 8 oz (226g) dark chocolate, chopped
  • 1 1/2 cups (300g) sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour

For the Cheesecake Layer

  • 16 oz (454g) cream cheese, softened
  • 3/4 cup (150g) sugar
  • 1 large egg
  • 1 tsp vanilla extract

For the Chocolate Ganache

  • 8 oz (226g) dark chocolate, chopped
  • 1/2 cup (120ml) heavy cream

Instructions

  1. Prepare the Brownie Layer: Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper. Melt butter and dark chocolate together. Mix in sugar, eggs, and vanilla. Fold in flour until just combined. Spread batter evenly in the prepared dish.
  2. Make the Cheesecake Layer: Beat cream cheese and sugar until smooth. Add egg and vanilla, beating until creamy. Spread over the brownie layer evenly.
  3. Bake: Bake for 35–40 minutes until edges are set and cheesecake layer is slightly golden. Cool completely and refrigerate for 2 hours.
  4. Prepare the Ganache: Heat heavy cream until simmering. Pour over chopped chocolate and let sit for 5 minutes. Stir until smooth.
  5. Assemble: Spread ganache over the chilled cheesecake layer. Refrigerate for 1 hour until set.
  6. Slice & Serve: Lift brownies out using parchment paper. Slice with a hot knife for clean edges.
