  • 1 lb ground beef
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 3 cups potatoes, diced
  • 4 cups beef broth
  • 2 cups shredded cheddar cheese
  • 2 cups milk
  • ¼ cup flour
  • 3 tbsp butter
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the Ground Beef – In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat and set aside.
  2. Sauté the Vegetables – Melt butter in the same pot and sauté onions, carrots, celery, and garlic for about 5 minutes, until softened.
  3. Add Potatoes & Broth – Stir in the diced potatoes and pour in the beef broth. Bring to a boil, then reduce heat and let it simmer for 15 minutes, or until potatoes are fork-tender.
  4. Thicken the Soup – In a small bowl, whisk the flour with the milk until smooth. Slowly add this mixture to the soup, stirring constantly. Cook for 5 minutes until thickened.
  5. Add Cheese & Beef – Lower the heat and stir in the shredded cheddar cheese until fully melted. Return the cooked beef to the pot and mix well.
  6. Season & Serve – Taste and adjust seasoning with salt, pepper, and paprika if desired. Simmer for 2 more minutes, garnish with parsley, and serve warm.
