- 1 lb ground beef
- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 3 cups potatoes, diced
- 4 cups beef broth
- 2 cups shredded cheddar cheese
- 2 cups milk
- ¼ cup flour
- 3 tbsp butter
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- Fresh parsley for garnish (optional)
Instructions
- Cook the Ground Beef – In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat and set aside.
- Sauté the Vegetables – Melt butter in the same pot and sauté onions, carrots, celery, and garlic for about 5 minutes, until softened.
- Add Potatoes & Broth – Stir in the diced potatoes and pour in the beef broth. Bring to a boil, then reduce heat and let it simmer for 15 minutes, or until potatoes are fork-tender.
- Thicken the Soup – In a small bowl, whisk the flour with the milk until smooth. Slowly add this mixture to the soup, stirring constantly. Cook for 5 minutes until thickened.
- Add Cheese & Beef – Lower the heat and stir in the shredded cheddar cheese until fully melted. Return the cooked beef to the pot and mix well.
- Season & Serve – Taste and adjust seasoning with salt, pepper, and paprika if desired. Simmer for 2 more minutes, garnish with parsley, and serve warm.
