Ingredients
1 medium head cauliflower (cut into florets)
2 large eggs
0.5 cup breadcrumbs (gluten-free if needed)
0.25 cup grated Parmesan cheese (optional)
2 tablespoons all-purpose flour (or chickpea flour)
2 garlic cloves, minced
2 tablespoons chopped fresh parsley
0.5 teaspoon salt
0.25 teaspoon black pepper
0.25 teaspoon paprika or chili flakes (optional)
Oil for frying
Instructions
1. Cut the cauliflower into florets and steam or boil until just tender, about 6–8 minutes. Drain well and cool slightly.
2. Mash the cauliflower with a fork or potato masher until chunky.
3. In a large bowl, mix the mashed cauliflower with eggs, breadcrumbs, flour, garlic, Parmesan, parsley, salt, pepper, and paprika.
4. Shape the mixture into patties using about 2 tablespoons per fritter.
5. Heat oil in a non-stick skillet over medium heat. Fry fritters for 3–4 minutes per side until golden and crisp.
6. Transfer to paper towels to drain excess oil.
7. Serve warm with your favorite sauce or as a side dish.
