Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 1/2 teaspoons ground cardamom

Optional: additional sugar for rolling

Instructions

1. Cream the butter and sugar in a large mixing bowl until light and fluffy (2–3 minutes).

2. Add the egg and vanilla extract, mixing until smooth and well combined.

3. In a separate bowl, sift together flour, baking soda, salt, and cardamom.

4. Slowly mix the dry ingredients into the wet ingredients until just combined.

5. Chill the dough for 30 minutes to 1 hour (optional, but helps control spread).

6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper or baking mats.

7. Scoop dough into balls and optionally roll in sugar. Flatten lightly with a fork or glass.

8. Bake for 10–12 minutes, until edges are golden and centers are set.

9. Let cool for 5 minutes on the sheet, then transfer to a wire rack to cool fully.


Notes

Freshly ground cardamom gives the best flavor—grind your own if you can.

Avoid overbaking; the centers should be slightly soft when you remove them from the oven.
