3 large yellow onions, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon sugar

1/4 cup dry white wine

4 oz cream cheese, softened

1/2 cup sour cream

1/2 cup mayonnaise

1 1/2 cups grated Gruyere cheese

1/4 cup grated Parmesan cheese

1 teaspoon fresh thyme leaves

Pinch of cayenne or smoked paprika (optional)

Toasted baguette slices, crackers, or vegetables for serving


Instructions

1. Melt butter and olive oil in a large skillet over medium heat. Add sliced onions, salt, pepper, and sugar. Cook slowly, stirring occasionally, for 30–40 minutes until golden brown.

2. Deglaze the pan with wine, scraping up the browned bits. Cook until liquid is mostly gone. Let cool slightly.

3. In a bowl, mix cream cheese, sour cream, and mayo until smooth. Stir in the onions, Gruyere, Parmesan, and thyme.

4. Transfer the mixture to a greased baking dish and sprinkle extra Gruyere and Parmesan on top.

5. Bake at 375°F (190°C) for 20–25 minutes, or until bubbly and lightly golden.

6. Broil for 2–3 minutes for a browned top—watch closely.

7. Garnish with thyme or paprika. Serve warm with your choice of dippers.


Notes

Make the caramelized onions ahead of time and refrigerate for up to 3 days.

Always use freshly grated cheese for the best melt and texture.
