  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup finely chopped apples

Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Toppings:

  • Caramel sauce
  • Streusel crumbs or chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Whisk dry ingredients together.
  3. Cream butter and sugar; add eggs, vanilla, and sour cream.
  4. Mix dry ingredients into wet, then fold in apples.
  5. Beat cheesecake filling ingredients until smooth.
  6. Fill liners halfway with batter, add cheesecake filling, top with more batter.
  7. Bake 18-22 minutes. Cool completely.
  8. Beat frosting ingredients until fluffy. Frost cupcakes.
  9. Drizzle with caramel and add toppings.
