- 2 lbs boneless, skinless chicken breast or thighs (cubed)
- 1 medium onion (chopped)
- 2 celery stalks (chopped)
- 3 cloves garlic (minced)
- 1 can (4 oz) green chiles
- 2 cans (15 oz each) white beans (drained and rinsed)
- 4 cups chicken broth
- 8 oz cream cheese (cubed)
- 1 tbsp Cajun seasoning
- Salt and pepper to taste
- 1 lime (juiced)
- Fresh cilantro (optional)
Instructions
- In a large pot, heat oil over medium heat. Add the chopped onions and celery, and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the cubed chicken to the pot and sprinkle with Cajun seasoning. Stir to coat the chicken with the seasoning and sear lightly for about 5 minutes.
- Pour in the chicken broth and green chiles. Bring the mixture to a simmer and cook for 15–20 minutes, or until the chicken is cooked through and tender.
- Remove the chicken and shred it using two forks. Return the shredded chicken to the pot and stir.
- Add the rinsed beans and cubed cream cheese. Stir until the cream cheese melts and the chili becomes creamy.
- Simmer for another 5–10 minutes to blend the flavors. Stir in the lime juice and season with salt and pepper to taste.
- Serve hot, topped with fresh cilantro if desired.
