Ingredients
- 6 slices bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons Cajun seasoning (adjust to taste)
- 5 medium Yukon Gold potatoes, peeled and diced
- 4 cups chicken broth (or vegetable broth)
- Salt and black pepper, to taste
- 1/2 cup heavy cream or coconut milk (optional, for creamier soup)
- 1 cup shredded cheddar cheese, for topping
- Chopped chives or green onions, for garnish

In a large pot, cook chopped bacon over medium heat until crisp. Remove with a slotted spoon and set aside. Leave 1-2 tablespoons of bacon fat in the pot.

Add diced onion to the pot and sauté until soft, about 5-7 minutes.

Stir in minced garlic and cook for another 30 seconds until fragrant.

Add Cajun seasoning and toast the spices for 1 minute.

Add diced potatoes and pour in chicken broth. Stir to combine.

Bring to a boil, then reduce heat and simmer uncovered for 20-25 minutes, or until potatoes are tender.
