Description

Cajun potato salad brings a spicy Southern twist to the classic creamy side dish. Packed with flavor from bold Cajun seasoning, creamy mayo, tangy mustard, and fresh herbs, it’s the perfect side for BBQs, seafood, or any hearty main. This salad gets even better after chilling, making it a great make-ahead option.


Ingredients

1 lb red potatoes

1 lb Yukon Gold potatoes

3/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 1/2 tablespoons Cajun seasoning (adjust to taste)

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh parsley

2 green onions, finely chopped (optional)


Instructions

1. Wash and scrub the potatoes. Cut them into 1-inch chunks.

2. Place potatoes in a large pot of salted water. Bring to a boil, then reduce to a simmer and cook for 10–15 minutes, until fork-tender.

3. Drain the potatoes and let them cool slightly for about 10 minutes.

4. In a large bowl, mix together mayonnaise, Dijon mustard, Cajun seasoning, apple cider vinegar, salt, and black pepper.

5. Gently fold the warm potatoes into the dressing until well coated.

6. Add parsley and green onions (if using) and stir to combine.

7. Cover and refrigerate for at least 1 hour before serving.

8. Taste and adjust seasoning before serving.

9. Garnish with extra parsley or a sprinkle of Cajun seasoning if desired.


Notes

For the best flavor, let the salad chill for at least an hour before serving.

Always salt the boiling water to season the potatoes from within.

Adjust the spice level by increasing or reducing the amount of Cajun seasoning.
