  • 2 cups elbow macaroni (uncooked)
  • ¾ cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Cajun seasoning (adjust to taste)
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup green peas (thawed if frozen)
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon paprika (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the macaroni until al dente, about 7–9 minutes. Drain and rinse under cold water.

  2. In a large bowl, whisk together the mayonnaise, sour cream, Cajun seasoning, apple cider vinegar, sugar, salt, and pepper until smooth.

  3. Add the cooled macaroni to the bowl and toss gently to coat every piece.

  4. Fold in the green peas and half of the parsley until combined.

  5. Cover and chill in the refrigerator for at least 1 hour.

  6. Before serving, sprinkle with paprika and the remaining parsley for a fresh pop of color and flavor.
