500g chicken breast, diced

2 tablespoons Cajun seasoning

1 tablespoon olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

300g rotini pasta

2 tablespoons fresh chopped parsley or dill

Salt and pepper to taste

Water for boiling pasta


Instructions

1. Dice the chicken breast into bite-sized pieces and toss with Cajun seasoning, a pinch of salt, and olive oil. Let marinate for 10–15 minutes.

2. Bring a large pot of salted water to a boil. Cook rotini pasta until al dente, then drain and reserve ½ cup of the pasta water.

3. Heat a large skillet over medium-high heat. Add the chicken pieces in a single layer and sear until golden and fully cooked, about 7–8 minutes. Remove and set aside.

4. In the same skillet, reduce heat to medium and add minced garlic. Cook for 30 seconds until fragrant.

5. Pour in the heavy cream and bring to a light simmer. Stir in the grated Parmesan and mix until the sauce thickens and becomes creamy.

6. Add the cooked pasta into the sauce and toss well to coat. Add a splash of reserved pasta water if needed to loosen the sauce.

7. Return the cooked chicken to the skillet and stir to combine, or serve on top of the pasta for presentation.

8. Garnish with fresh chopped parsley or dill before serving.
