4 medium yellow onions

6 tablespoons unsalted butter

1 tablespoon olive oil

3 garlic cloves

1 teaspoon fresh thyme leaves

1 teaspoon fresh rosemary chopped

1 cup vegetable broth

1 tablespoon fresh parsley chopped


Instructions

1. Preheat oven to 375°F (190°C). Peel the onions, trim the top and root slightly to create flat surfaces, keeping them intact. Carefully hollow a small cavity in the center of each onion.

2. Place onions upright in a snug baking dish. Season with salt and black pepper, gently separating layers slightly to allow seasoning inside.

3. Insert small pieces of butter and sliced garlic into the center of each onion. Drizzle olive oil over the tops and sprinkle with thyme and rosemary.

4. Pour vegetable broth into the baking dish so it rises about 1/4 to 1/2 inch around the onions. Dot remaining butter over the tops.

5. Cover tightly with foil and roast for 50–60 minutes until the onions begin to soften.

6. Remove foil and continue roasting for 25–30 minutes, basting occasionally with the buttery broth, until deeply golden and fork-tender.
