Ingredients
2 cups cooked shredded chicken
1/2 cup buffalo wing sauce
1 1/2 cups shredded mozzarella or Monterey Jack cheese
1/4 cup ranch or blue cheese dressing
4 large flour tortillas
2 tablespoons unsalted butter
Optional: sliced green onions, jalapeños, or crumbled blue cheese
Instructions
1. In a medium bowl, mix shredded chicken with buffalo wing sauce until evenly coated. Warm slightly if needed.
2. Lay out a tortilla. On one half, sprinkle cheese, add buffalo chicken mixture, drizzle dressing, then add more cheese.
3. Fold tortilla over to form a half-circle. Repeat with remaining tortillas.
4. Heat butter in a non-stick skillet over medium heat. Cook each quesadilla 3–4 minutes per side until golden and crisp.
