Ingredients

Scale

1 box brownie mix (1819 oz, without fudge packet)

0.25 cup all-purpose flour

0.25 cup vegetable oil

2 tablespoons water

2 large eggs

1 cup creamy peanut butter

1 cup powdered sugar

2 tablespoons unsalted butter, softened

1 teaspoon vanilla extract

0.75 cup semi-sweet or milk chocolate chips

1 teaspoon coconut oil or vegetable shortening (optional)

Instructions

1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.

2. In a large mixing bowl, combine brownie mix, flour, oil, water, and eggs. Stir until a thick dough forms.

3. Scoop dough using a medium cookie scoop onto baking sheets, spacing about 2 inches apart.

4. Flatten tops slightly and bake for 8–10 minutes, until edges are set but centers remain soft.

5. Remove from oven and immediately press a shallow indent into each cookie center using a spoon or your thumb.

6. Let cookies cool completely on a wire rack.

7. In a separate bowl, beat together peanut butter, powdered sugar, butter, and vanilla until smooth.

8. Roll 1-teaspoon portions of peanut butter filling into balls and place into the center of each cookie, flattening slightly.

9. Melt chocolate chips and optional coconut oil in the microwave in 30-second intervals, stirring until smooth.

10. Drizzle melted chocolate over the peanut butter centers using a spoon or piping bag.

11. Let cookies sit until chocolate sets, or refrigerate for 10 minutes for quicker setting.

12. Serve, share, or store for later — enjoy!

Notes

Use shelf-stable creamy peanut butter for the best filling consistency.

Do not overbake the cookies — soft centers are key to that fudgy texture.

For neat presentation, let the chocolate drizzle set completely before stacking or storing.
