Bruschetta Chicken Pasta is a vibrant, Italian-inspired dish combining juicy grilled chicken, a fresh tomato-basil topping, and perfectly cooked pasta. It’s a quick, easy, and flavorful meal that works equally well for casual dinners or special occasions.

  • 2 boneless, skinless chicken breasts
  • Salt & freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil, divided
  • 3 cups cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 1/4 cup fresh basil leaves, chopped
  • 8 ounces pasta (penne, rigatoni, or spaghetti)
  • 1/4 cup freshly grated Parmesan cheese
  • Optional: balsamic glaze for drizzling

Instructions

  1. Season and cook the chicken:
    Pat chicken breasts dry. Season with salt, pepper, and Italian seasoning.
    Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook chicken for 5–6 minutes per side, until golden and cooked through (165°F). Let rest, then slice.

  2. Cook the pasta:
    Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.

  3. Prepare bruschetta topping:
    In a bowl, mix halved tomatoes, minced garlic, chopped basil, and remaining 1 tbsp olive oil. Season lightly with salt and pepper.

  4. Combine:
    In the skillet, add drained pasta and a splash of reserved pasta water. Toss to heat through. Add sliced chicken and bruschetta topping, and toss gently.

  5. Serve:
    Plate pasta. Top with Parmesan and drizzle with balsamic glaze if desired. Enjoy!
