- 2 cups fresh broccoli florets (steamed or blanched)
- 1 ½ cups shredded cheddar cheese
- ½ cup grated parmesan cheese
- 1 cup breadcrumbs (regular or panko)
- 2 large eggs
- 1 tsp garlic powder
- Salt and pepper, to taste
- Olive oil (for brushing)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Steam or blanch the broccoli until tender, then chop it finely and let it cool.
- In a large mixing bowl, combine the chopped broccoli, cheddar cheese, parmesan, breadcrumbs, garlic powder, salt, and pepper.
- Crack in the eggs and mix everything together until the mixture sticks together but isn’t too wet.
- Roll the mixture into balls, about 1 to 1.5 inches in diameter.
- Coat each ball with breadcrumbs to ensure they are fully covered.
- Place the cheese balls on the prepared baking sheet and lightly spray or brush them with olive oil.
- Bake for 20-25 minutes, or until golden brown and crispy on the outside.
- Let cool slightly before serving. Enjoy with your favorite dipping sauce!
