Description

  • 2 cups fresh broccoli florets (steamed or blanched)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated parmesan cheese
  • 1 cup breadcrumbs (regular or panko)
  • 2 large eggs
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Olive oil (for brushing)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Steam or blanch the broccoli until tender, then chop it finely and let it cool.
  3. In a large mixing bowl, combine the chopped broccoli, cheddar cheese, parmesan, breadcrumbs, garlic powder, salt, and pepper.
  4. Crack in the eggs and mix everything together until the mixture sticks together but isn’t too wet.
  5. Roll the mixture into balls, about 1 to 1.5 inches in diameter.
  6. Coat each ball with breadcrumbs to ensure they are fully covered.
  7. Place the cheese balls on the prepared baking sheet and lightly spray or brush them with olive oil.
  8. Bake for 20-25 minutes, or until golden brown and crispy on the outside.
  9. Let cool slightly before serving. Enjoy with your favorite dipping sauce!
