4 large buttery croissants

4 large eggs

2 tablespoons milk or heavy cream

Salt and black pepper to taste

1 tablespoon butter

4 breakfast sausage patties

4 slices thick-cut bacon

1/2 cup shredded sharp cheddar or 4 slices American cheese

1/4 cup finely chopped chives

1 tablespoon butter (for cheese sauce)

1 tablespoon flour

1/2 cup milk

1/2 cup shredded cheddar or American cheese

Pinch of salt


Instructions

1. Place bacon in a cold skillet or baking sheet. Cook over medium heat until crispy, flipping as needed. Drain on paper towels.

2. Cook sausage patties in a skillet over medium heat for 4–5 minutes per side until browned and cooked through.

3. In a bowl, whisk eggs with milk or cream, salt, and pepper. Melt butter in a skillet and scramble eggs on low heat until soft and creamy.

4. Optional cheese sauce: Melt butter in a saucepan, whisk in flour, then milk. Stir until thickened. Add cheese and salt, stir until smooth.

5. Slice croissants in half without cutting through. Lightly toast them under the broiler or in a toaster oven.

6. Assemble: Layer scrambled eggs on the bottom half of each croissant, add sausage, pour cheese sauce or place cheese slice, top with bacon, sprinkle with chives, and close the sandwich.
