Ingredients
2 tablespoons unsalted butter (softened)
2 tablespoons olive oil
4 garlic cloves minced
2 tablespoons fresh parsley finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
8 slices rustic sourdough or Cuban bread
4 slices Swiss cheese
4 slices mozzarella cheese
8 slices deli ham or prosciutto
Optional: yellow mustard or sliced pickles
Instructions
1. In a small bowl, combine softened butter, olive oil, garlic, parsley, salt, and pepper to create the garlic herb butter.
2. Spread the garlic butter generously on one side of each slice of bread.
3. On the unbuttered side of half the slices, layer Swiss cheese, ham or prosciutto, and mozzarella cheese.
4. Top with the remaining slices of bread, buttered side facing out.
5. Heat a skillet over medium heat and toast sandwiches for 3–4 minutes per side, pressing down lightly with a spatula.
6. Cook until the outside is golden and crispy and the cheese is melted inside.
7. Let rest for one minute, then slice and garnish with more parsley.
8. Serve warm, optionally with mustard or pickles on the side.
Notes
Use thick-cut rustic bread to avoid sogginess and get a nice crunch.
Let cheese and meat come to room temperature for even melting.
Garlic butter can be made ahead and stored in the fridge for 1 week.
