Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans (toasted preferred)

Instructions

  • Prep the baking sheet by lining it with parchment paper or a silicone mat. Sprinkle half of the chopped pecans over the surface.
  • In a heavy-bottomed saucepan, melt butter, sugar, and salt over medium heat. Stir constantly.
  • Continue cooking and stirring until the mixture reaches a deep amber color or 300°F (hard crack stage) on a candy thermometer.
  • Remove from heat and quickly stir in the vanilla extract.
  • Immediately pour the hot toffee over the pecans on the lined sheet. Spread evenly with a spatula.
  • Sprinkle chocolate chips on top while the toffee is still hot. Let them melt, then spread into an even layer.
  • Top with the remaining pecans and gently press them into the chocolate.
  • Let the toffee cool completely (about 2 hours), then break into pieces and enjoy!
