Ingredients

Scale

1 lb ground turkey (93% lean recommended)

1/2 cup breadcrumbs (plain or Italian-style)

1/4 cup milk (dairy or unsweetened non-dairy)

1 large egg

3 garlic cloves, minced

1/4 cup finely chopped onion (or grated)

1/4 cup chopped fresh parsley

1 tsp dried oregano

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp crushed red pepper flakes (optional)

1 tbsp olive oil (for brushing or drizzling)

2 tbsp grated Parmesan cheese (optional)

Instructions

1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.

2. In a small bowl, combine the breadcrumbs and milk. Let them soak for 5 minutes.

3. In a large bowl, mix ground turkey, soaked breadcrumbs, egg, garlic, onion, parsley, oregano, salt, pepper, red pepper flakes, and Parmesan.

4. Use a cookie scoop or hands to form 1.5-inch meatballs. Place them on the prepared sheet.

5. Brush or drizzle the tops with olive oil.

6. Bake for 18–20 minutes or until internal temp reaches 165°F (74°C). Broil for 2–3 minutes if desired.

7. Let the meatballs rest for 5 minutes before serving.

Notes

Avoid overmixing the meat to keep the meatballs tender.

Use soaked breadcrumbs to retain moisture and softness.

Ground turkey with a bit of fat (93% lean) gives the best texture and flavor.
