1 lb beef sirloin or ribeye, thinly sliced

8 oz cremini mushrooms, sliced

1 medium yellow onion, diced

2 cloves garlic, minced

1 tbsp all-purpose flour

1 cup beef broth

1 tbsp Worcestershire sauce

1 tsp Dijon mustard

3/4 cup sour cream

1/2 tsp salt

1/4 tsp black pepper

2 tbsp butter

1 tbsp olive oil

1 tbsp fresh parsley, chopped (optional)


Instructions

1. Slice beef into thin strips against the grain. Prepare all vegetables before cooking.

2. Heat 1 tbsp each of butter and olive oil in a large skillet. Sear beef in batches until browned. Remove and set aside.

3. Add more butter if needed, then sauté diced onion until soft, about 3–4 minutes. Add garlic and cook 30 seconds.

4. Stir in mushrooms and cook until browned and their moisture has evaporated, about 5–7 minutes.

5. Sprinkle flour over the mushrooms and stir to coat. Let it cook for 1 minute.

6. Gradually add beef broth while stirring. Add Worcestershire sauce and Dijon mustard. Let sauce thicken.

7. Lower the heat and stir in sour cream. Return beef to skillet and simmer until heated through. Season with salt and pepper.

8. Garnish with parsley and serve over noodles, rice, or mashed potatoes.


Notes

Use full-fat sour cream to prevent curdling and add richness.

Avoid overcooking the beef by returning it only at the end.

Caramelize the mushrooms fully for the deepest flavor.
