Ingredients
3 large Yukon Gold potatoes
3 tablespoons olive oil
4 garlic cloves, minced
1 teaspoon red chili flakes
2 tablespoons fresh lemon juice
3 tablespoons chopped fresh parsley
1 teaspoon ground coriander
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Peel and cube the potatoes into 1-inch chunks, then soak them in cold water for 20 minutes.
2. Preheat oven to 425°F (220°C). Parboil the drained potatoes in salted water for 6–8 minutes until just tender.
3. Drain and let the potatoes steam dry for a few minutes.
4. Toss the potatoes with olive oil, salt, pepper, and ground coriander.
5. Spread them on a parchment-lined baking sheet, ensuring they are not overcrowded.
6. Roast for 25–30 minutes, flipping halfway, until crisp and golden.
7. In the last 5 minutes, sprinkle the minced garlic and red chili flakes over the potatoes and return to oven.
8. Remove from the oven, toss with lemon juice and parsley, and serve hot.
