200g chocolate cookies

100g butter (melted)

680g cream cheese (softened)

150g sugar

3 large eggs

120ml Baileys Irish Cream

240ml heavy cream

2 tsp vanilla extract

170g dark chocolate (chopped)

120ml heavy cream


Instructions

1. 1. Preheat your oven to 325°F (163°C). In a food processor, pulse the chocolate cookies until they turn into fine crumbs. Mix in the melted butter until combined.

2. 2. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Let it cool while you prepare the filling.

3. 3. Beat the softened cream cheese with sugar until smooth. Add eggs one at a time, followed by Baileys, heavy cream, and vanilla extract. Mix until smooth and well combined.

4. 4. Pour the filling into the cooled crust and bake for 55-60 minutes, or until the edges are set and the center is slightly wobbly. Let it cool to room temperature, then refrigerate for at least 4 hours.

5. 5. For the ganache, heat the heavy cream in a saucepan until it simmers. Pour it over the chopped chocolate, let it sit for a few minutes, then stir until smooth.

6. 6. Once the cheesecake is chilled, pour the ganache over the top and spread it evenly. Let the ganache set for about 30 minutes before serving.

1. Room temperature ingredients: Always make sure the cream cheese and eggs are at room temperature to avoid lumps and ensure a smooth texture.

2. Chill overnight: For the best flavor and texture, let the cheesecake chill in the fridge overnight.

3. Don’t overbake: If the center of the cheesecake still has a slight wobble when you remove it from the oven, it’s perfectly cooked. Overbaking can cause cracks.
