Ingredients
1 lb beef sirloin or tenderloin, sliced thin
1 tbsp butter (for searing beef)
1 tbsp butter (for sautéing vegetables)
1 medium yellow onion, diced
3 cloves garlic, minced
8 oz cremini mushrooms, sliced
2 tbsp all-purpose flour
1 1/2 cups beef broth
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1/2 cup sour cream
Salt and black pepper, to taste
2 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Slice the beef into thin strips against the grain. Prepare the vegetables and measure all ingredients.
2. Heat 1 tbsp butter in a large skillet over medium-high heat. Sear beef in batches until browned, 1–2 minutes per side. Remove and set aside.
3. In the same skillet, add the remaining butter. Sauté onions until soft, then add mushrooms. Cook until browned and moisture has evaporated. Stir in garlic and cook for 1 minute.
4. Sprinkle flour over the vegetables and stir to coat. Cook for 1–2 minutes.
5. Slowly pour in beef broth, stirring constantly to create a smooth sauce. Let simmer to thicken.
6. Stir in Dijon mustard and Worcestershire sauce. Season with salt and pepper.
7. Return beef and its juices to the pan. Let it warm through for 2–3 minutes over medium-low heat.
8. Turn off the heat. Stir in sour cream until fully incorporated. Avoid boiling.
9. Garnish with fresh parsley and serve hot over noodles, rice, or mashed potatoes.
Notes
Always slice beef against the grain for maximum tenderness.
Avoid boiling the sauce after adding sour cream to prevent curdling.
Use high-quality beef broth for a deeper, more robust sauce flavor.
