Ingredients
2 tablespoons olive oil
1 medium onion, finely chopped
1 cup diced carrots
1 cup diced celery
1 green bell pepper, diced
3 cloves garlic, minced
2 cups cooked shredded chicken
2 cups pulled pork
1 can (15 oz) crushed tomatoes
1 can (15 oz) diced tomatoes
1/2 cup barbecue sauce
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce (optional)
1/2 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 cups chicken broth
1 1/2 cups frozen corn
1 1/2 cups frozen lima beans
1 tablespoon brown sugar (optional)
Chopped fresh parsley, for garnish
Instructions
1. In a large Dutch oven, heat olive oil over medium heat. Add onion, carrots, celery, and bell pepper. Sauté for 6–8 minutes until softened and lightly caramelized. Add garlic and cook 1 minute more.
2. Stir in the shredded chicken and pulled pork. Add crushed and diced tomatoes and mix well.
3. Add barbecue sauce, Worcestershire sauce, hot sauce (if using), smoked paprika, salt, and black pepper. Stir to combine evenly.
4. Pour in chicken broth, scraping the bottom of the pot to deglaze. Bring the stew to a gentle boil.
5. Reduce heat and let the stew simmer uncovered for 45 minutes, stirring occasionally.
6. Add frozen corn, lima beans, and brown sugar (if using). Continue to simmer for 15–20 minutes until thickened.
7. Taste and adjust seasonings. Serve hot, garnished with fresh parsley.
Notes
For best results, use a combination of chicken and pork to achieve that classic Brunswick flavor balance.
Allow the stew to simmer slowly for depth; it gets thicker and tastier as it sits.
This recipe is excellent for freezing—portion out extras for future meals.
