Ingredients
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup brown sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
1/4 cup milk
2 cups peeled and diced tart apples
1/2 cup all-purpose flour (streusel)
1/3 cup brown sugar (streusel)
1/2 tsp ground cinnamon (streusel)
1/4 cup cold unsalted butter, cubed (streusel)
Caramel sauce for drizzling (optional)
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan with parchment paper on the bottom.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In a large bowl, cream butter with granulated and brown sugar until light and fluffy, about 3–4 minutes.
4. Beat in eggs one at a time, then stir in vanilla extract.
5. Mix in sour cream and milk until combined.
6. Gradually add dry ingredients to the wet mixture; mix just until incorporated.
7. Gently fold in the diced apples.
8. Make streusel: combine flour, brown sugar, and cinnamon. Cut in cold butter until crumbly.
9. Pour the batter into the prepared pan and smooth the top.
10. Sprinkle the streusel topping evenly over the batter.
11. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
12. Cool for 15 minutes in pan, then remove sides and let cool fully. Drizzle with caramel sauce before serving.
Notes
Use cold butter for the streusel topping to create a proper crumb texture.
Don’t overmix the batter to keep the cake soft and tender.
Granny Smith apples hold up best when baked and give a great sweet-tart balance.
